SETTEMBRE: MESE DELLA VENDEMMIA Con la fine dell'estate, qui in Italia, e soprattutto in Piemonte, le colline si riempiono di colori e profumi che deliziano i sensi, e a visitarle sembra di essere immersi in un mare che dal verde acceso, lascia spazio all'entrata dell'autunno presentando i primi accenni di una stagione tutta da scoprire. Funghi, castagne, nocciole e vino (delizioso vino) sono l'inizio di quello che prospetta questo mese. Antropologicamente la vendemmia, (questo processo di raccolta delle uve destinate alla vinificazione) è un rituale pieno d'emozioni, conviviale e di festa, quasi religioso che riunisce dai tempi antichi gli uomini, sotto un appuntamento tanto atteso e colmo di speranza, che vede concretizzarsi il duro lavoro di un intero anno. Già nell'antica Roma con le feste in onore del dio Bacco, si solennizzava l'uva e il suo primo mosto. Questa costituisce, oggi come allora, una risorsa alimentare importante non solo per il vino: nell'antichità con i chicchi si realizzava la classica ricetta della schiacciata, con il succo non fermentato si otteneva una bevanda rinfrescante e con la cottura del mosto fresco con noci, mele o fichi si preparava la sapa, salsa che oggi noi usiamo per accompagnare carni e formaggi. Sono diversi i fattori che determinano la riuscita della vendemmia, il più importante è il clima. Nonostante il piovoso agosto che abbiamo alle spalle, si prospetta un'ottima annata per i produttori vinicoli del Bel Paese: secondo la CIA (Confederazione Italiana Agricoltori) assisteremo ad un incremento in volume ed un miglioramento nella qualità. Le vigne sono rigogliose, e l'uva presenta acini belli, profumati e sani, ottimi presupposti per un'annata tra le migliori degli ultimi anni. Sono molte le iniziative organizzate dalle cantine locali che consentono di seguire i passaggi della vendemmia: La raccolta, che un tempo avveniva solo manualmente, è stata oggi sostituita da macchinari per velocizzare il processo. Questa si effettua nelle prime ore del mattino quando la temperatura è ancora fresca. La pigiatura, una volta separati gli acini dal raspo, questi vengono schiacciati per ottenere il mosto che subirà il processo di fermentazione. La fermentazione. Necessità in questa fase una suddivisione tra uve bianche e uve rosse. - Quella in rosso prevede che il mosto rimanga a contatto con le bucce per permettere la dissoluzione dei polifenoli e degli aromi della buccia e dei vinaccioli. - Quella in bianco, invece, è ottenuta separando il mosto dal resto, così i vini bianchi risultano più fruttati e freschi, quasi privi di tannini. - Esiste ancora una variante che è la base dei vini rosè che prevede un periodo di macerazione tra il mosto e le parti solide di 24-36 ore per poi passare alla separazione dei suoi componenti. L'ultima fase consiste nella rifermentazione e l'invecchiamento che darà origine ai differenti tipi di vino, dagli spumanti ai vini invecchiati da meditazione, in base al processo seguito. In alcune città storicamente dedicate alla vendemmia è tutt'ora possibile seguire tutte le sue fasi, anche pigiare le uve a piedi scalzi in grandi bacinelle come facevano i nostri avi, e prender parte a questa meravigliosa festa di fine estate, appuntamenti imperdibili che trovano la felicità in adulti e bambini, facendo riscoprire la bellezza di un tempo. CURIOSITA': I vini ghiacciati. Secondo archivi storici nel 1794 in Germania, in seguito ad una repentina gelata, alcuni agricoltori decisero di provare a salvare gli acini congelati: spremendo il loro succo si accorsero del delizioso risultato e ancora oggi c'è chi decide di produrre questo particolare tipo di vino detto appunto “vino ghiacciato” ottenuto dalla vinificazione di grappoli d'uva sottoposti a giorni di gelo. Da allora, alcune file del vitigno vengono lasciati incolti durante i mesi di dicembre e gennaio in modo che gelo e disgelo disidratino l'acino in modo naturale, per concentrare gli zuccheri, gli acidi e gli estratti dell'uva, rendendo ancora più corposo e complesso l'aroma. I vini ghiacciati sono oggi considerati fra i vini da dessert più apprezzati e ricercati, dedicati ad una piccola fetta di mercato che riesce ad accaparrarsi questa delizia.
